What Shall We Eat To-day

Menus to-day take on added complexities due to the fact that Master is often forced to do his own ordering in the enforced absence of his Missy in Hongkong or Manila, and also to the advance in prices which puts some of our favourite dishes out of sight for the moment. But there are still plenty of good things to eat and perhaps these recipes may suggest welcome variety, "Upside-Down Cake"

The American Club serves a good "Upsidedown" which women newly admitted to these sacred precincts are enjoying. This may not be the same recipe but it is recommended as good. The recipe reads peaches, but apples which are plentiful now, may be substituted.

Cream % cup of shortening with 2/3 cup of sugar. Add one egg well beaten. Sift 2% cups of cake flour with 4 teaspoons of baking powder and a little salt. Add to mixture alternately with 1 cup of milk.

Melt three tablespoons of butter in a heavy frying pan. Add three tablespoons of brown sugar distributed over the bottom of the pan. Arrange peaches to cover the sugar and butter and pour the cake mixture over the peaches. Bake in an oven at 375 degrees, When done, turn out upside down on a plate and serve hot with cream, plain or whipped.
