Onions on Sticks

The French are not, we sre, ashamed to betray their love of onions. Onions are never absent from the Paris cocktail party. Small Onions are eaten from sticks like our little cocktail sausages. Some of them are topped with a morsel of red-peppered cream cheese. Onions also appear fixed on to cubes of preserved pineapple, or combined with a flake of lobster or smoked salmon or a prawn on brown bread end butter.

Small, very hot Welsh rarebits are popular on cold days and a mild horseradish cream decorated h capers and spread thickly on large slices of cooked carrot or cucumber.

Cucumber on a warm afternoon is served in thick slices which have some hours previously been covered with white sugar to remove the water and at the last moment sprinkled with lemon juice.
