Production of Casein

Soya beans contain between 30 and 40 per cent of protein and about 18 per cent. of oil. What the nutrition expert calls protein is known to the chemist as casein. We have heard much of casein in recent controversies as to the destination of surplus milk. Casein is treated to produce a bakelite substance used for making umbrella handles, coat-hangers, and a multiplicity of other articles. Its product jo hard, clean, and enduring.

Now, casein can be produced in much larger ratio from soya beans than from skimmed milk, and that is why.Mr. Henry Ford has become much interested in this plant, which "he himself has been growing on many acres in the*United States and also at his farming estate at Boreham, in Essex, where he first experimented in raising some Michigan varieties of soya beans. These failed, but he has since been raising beans from acclimatised varieties of the soya.

That Scotland's interest in this plant is not new is evident from that fact that about 30 years ago Professor Hendrick tried raising it from Manchurian seed at Aberdeen. While in the open the seeds hardly germinated, a few plants grew in a greenhouse and even flowered there.
