Having made our houses fit for heroes to live in and educated our servants up to attending on them, let us now take time to meditate on the food and drink which we are going to bring into our houses.
The Shanghai Municipal Council has various stamps for meat which has passed its inspectors, and it is as well to know them. They are reproduced in the Public Health Department's booklet "Aids to Health: A Guide for the Shanghai Resident," which can be obtained on request. There is Ist quality and 2nd quality meat, plus buffalo, horse and goat. But by buying direct from a reliable butchery we need have no anxiety on this score.
Whatever we may do during the good cold days of the winter about our marketing. during the summer we shall do well to deal with a reliable butchery. Delivery vans will obviate the cook's journey en rickshaw from the market with meat and vegetables in a huddle and probably open to dust and flies. Also cook will be kept from the temptation to buy meat which, if not already "little spoiled," may be nearer becoming so than it should be.
