Canes of dried apple rings extended between the rafters can often be seen in Danish farmhouse kitchens.
The process of preparing them for drying is simple, and they can just as easily be dried in a cool oven or airing cupboard, and stored between sheets of greaseproof paper in lidded wooden boxes. Apples stored thus take up far less room than when they are whole.
Peel and core apples, cut into slices about five to the inch with a silver knife. Drop them into a bowl of salted water (one teaspoonful of salt to one quart of cold water). Lift out and thread well apart on to thin canes previously cut to length required for oven or cupboard. The canes sold: for staking plants serve excellently.
